Southern Fried Swai with Country Coleslaw
4-5 oz Swai fish fillets, thawed and cleaned
1/2 cup of all purpose flour
3 tbsp coarse ground yellow corn meal
1 medium sized egg
¼ cup milk or milk substitute
1/8 tsp salt
A pinch of cayenne pepper
A dash black pepper
Olive Oil for frying
Pour the milk into a shallow bowl and set it aside. Beat the egg thoroughly in a shallow bowl and set aside. Mix flour, corn meal and seasonings thoroughly in shallow bowl. Coat the swai fish fillets first in milk, then in egg, then press each side of fillets into the flour mixture and set them aside.
Pour oil into the bottom of a deep skillet to a depth of ¼ inch. Heat this over medium high heat. Then gently place coated fish in pan and fry for one minute. Using a spatula, gently turn the fillets over and fry them for one more minute. Remove fillets to serving dish and cover for one or two minutes prior to serving. This swai fish recipe serves 4 people.
To avoid disappointment when making the standard pancakes follow the standard easy pancake recipe. First you will heat the frying pan and put a small amount of butter or fat in the middle of the pan. Allow it to melt and spread it to cover the pan. When the butter or fat begins to smoke you can add in some batter. About two tablespoons or enough to thinly cover the bottom of the pan. Move or tilt the pan to help you to spread the batter evenly. Once the bottom is golden brown you can turn it over so that the other side can cook. Once it has gone golden brown your pncake is ready. Some of my favorites are with sugar and cinnamon or filling it with savoy mince and top it with cheese.
